IN THE MOOD FOR LOVE with Strawberry Hemp Tarts

This recipe was developed on the premise there is nothing in the world that says love more than beautiful food.  Make this special tart for your love this Valentine's Day.  It's sure to set the mood for love ❤️❤️

Base

  • 1 packet Clean Mixes Beauty Blend with Hemp
  • 4 Tbsp rice malt syrup
  • 3 Tbsp coconut oil melted
  • 1 pinch kosher salt

 Mix all ingredients to form sandy crumb.

 Evenly divide mixture into greased and lined muffin tins.

Press down with spoon or bottom of glass to form solid base.

Place in freezer for 1 hour

(Grease muffin tins with coconut oil and line with a single strip of baking paper for easy removal)

Filling

  • 2 cups raw cashew, soaked overnight or quick soak (30mins in hot water)
  • 1/3 cup rice malt syrup
  • 1/2 cup coconut milk
  • 1/4 cup lemon juice
  • 1/3 cup coconut oil melted
  • 1/2 cup fresh strawberries
  • 1/2 cup freeze dried berries
  • 2 tsp rose water
  • 1 pinch of kosher salt

Blend everything except the berries into a smooth consistency, scrape down sides of blender or food processor.  Once blended to smooth, adjust to taste with either more lemon juice or maple.  You want a balance of tart and sweet

Pour 1/3 mixture into a bowl and reserve to blend with berries.

With the other 2/3 mixture divide equally between bases and place back into freezer for about 1/2 hour to firm set.

With the remaining 1/3 blend with freeze dried berries and fresh berries until smooth.

Pour this mixture on top of the other ingredients in the muffin tray and place back into freezer to completely set (up to 2 hours)

 To serve

Thaw out mixture for about 10-15 minutes

Decorate with fresh and dried berries and sprinkle of toasted hemp seeds and freeze dried strawberry powder.
