Minty Granola Slice

This is a fantastic slice to have on hand to satisfy your your sweet tooth, without the processed sugar!  It's packed full of seeds and nuts and will keep you feeling nourished and satisfied.

You'll Need:

  • 1 packet Clean Mixes Collagen After Dinner Mint
  • 1/2 cup almonds
  • 1/2 cup cashews
  • 1 1/2 cups rolled oats
  • 1 cup coconut chips
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/2 cup apricots chopped
  • 1/2 cup cranberries
  • 1/2 cup coconut oil
  • 1/2 cup maple syrup
  • 1/4 cup chia seeds
  • 1/4 cup sesame seeds (mixed black and white) extra for sprinkle on top

 Chocolate topping

  • 1 bar Benetto chocolate mint & coacoa
  • 1 tbsp coconut oil
  • 2 tbsp coconut milk

TO MAKE:

Chop the almonds and cashews into bite size pieces, place onto dry frying pan, lightly toast these to release oils and place into mixing bowl

Next add the coconut oil to the pan and toast coconut chips, pumpkin seeds, sunflower seeds, rolled oats, sesame seeds till light golden colour and place into mixing bowl.

Chop cranberries and apricots and place into mixing bowl.

Add contents of Clean Mixes Collagen After Dinner Mint mix into mixing bowl and add maple syrup.

Empty mixture into a lined baking tray that measures 27cm x 37cm and press down well to form an even layer. Use measuring cup to assist with this.

Place mixture into fridge and allow to set for 4 hours or until set.

For chocolate topping

Gently melt chopped chocolate bar along with coconut oil and coconut milk to form Ganache and pour over mixture and spread evenly

Sprinkle with extra sesame seeds if desired or leave plain.

Cut into bars or into bite size pieces for children.

These will keep in the fridge for up to a week, best to keep in the fridge so keep their shape.
