Strawberry Cream Bites Recipe
The ultimate quick simple Christmas or BBQ dessert with no added sugar, no dairy, no gluten.
These freezer treats are perfect for when the sweet tooth hits, but you are looking for that icecream style fix, with a little sweet chocolate satisfaction. The strawberry cream on top stays nice and fluffy from the whipping, and the Choc Raspberry base has a smooth, chewy consistency with the raspberry crunch we all love!
What you will need:
For the base:
1 x Clean Mixes Choc Raspberry (or any other flavour of choice)
2-3 Tbsp Coconut Oil (depending on flavour above)
2-3 Tbsp Rice Syrup (depending on flavour above)
For the Strawberry Cream:
1 1/2 C Macadamia nuts (raw)
1 C Coconut cream
1t vanilla paste (no added sugar)
Pinch Himalayan Salt
1/2 C Melted Coconut oil
2 T Rice Syrup (use more if you like it sweet)
1 C Chopped, hulled, fresh strawberry (or fruit of choice)
Method:
The Base:
Following the instructions on the back of the Clean Mixes Choc Raspberry packet, add coconut oil and rice syrup to the mix in a bowl. Mix. Spoon tablespoon amounts of mix into a mini muffin tray (silicon tray would be best) and pat down to create 'disks'.
Freeze.
The Filling:
In a high speed blender, blend all ingredients except strawberry until smooth. Once smooth, add strawberries and blend until strawberries are smooth and mixed through.
Remove muffin tray from freezer.
Spoon filling into the muffin trays on top of the 'disks' and smooth.
Place tray in the freezer for 30 minutes - 1 hour to set.
Once set, to remove from the muffin trays, run a hot sharp knife around the exterior of the 'bite' to pop out. The tip here is for the bites to be super frozen.
Return to the freezer and once ready to serve, remove from the freezer around 10 minutes before serving to warm up a little.
