Banana Cream Pie (Banoffee Pie)
This Clean Mixes hack will take you to cream pie heaven without the guilt. This recipe is gluten free, dairy free, refined sugar free and vegan.
Quick to whip up, and only requiring a few ingredients and some love - perfect for when you need to serve something impressive but simply don't have the time.
We bring you this Clean Mixes hack - BANANA CREAM PIE (Banoffee Pie)
You will need:
For the base:
2 x Salted Caramel Clean Mixes (or 2 x Cacao Crunch for a Choc Banana variation)
Coconut oil and rice syrup
Blender (optional)
For the filling:
6 x Frozen bananas (roughly 650 grams)
1/2 x Can Nature's Charm Whipping Cream or Coconut Cream

1 TBSP Maple Syrup
Optional extras:
1/8 TSP Vanilla paste / powder
1/8 TSP Nutmeg or Cinnamon
Loving Earth Dark Chocolate for drizzling on top.

Instructions:
For the base:
Follow the instructions on the Clean Mixes packet. Simply add coconut oil and rice syrup to the Salted Caramel mix and then pat down into a lined cake tin to make a 'crust'. We opted to further blend the Salted Caramel mix before adding to the cake tin for a smooth, easy to cut base (without date chunks).

Refrigerate the base while you make the filling.
For the filling:
Place all ingredients in the blender; frozen bananas, Nature's Charm whipping cream (or coconut cream), maple, vanilla and spice.
Blend until smooth.
Pour the filling into the lined cake tin on top of the Salted Caramel base. A few taps to remove air bubbles and freeze for around four hours until set.
Once frozen, melt Loving Earth Dark Chocolate and drizzle over the cake for that extra wow factor. Allow chocolate to set.
Keep cake frozen, until just before serving.
When ready to serve, simply remove from the freezer, top with a few fresh bananas on top and voila!
